Program Introduction

This program is designed to supply trainees with basic knowledge and practical skills in culinary arts, with a focus on professional food preparation and production. Learning is conducted in a training kitchen equipped with modern facilities, using a hands‑on approach covering:

Theory and techniques of Malaysian, Asian, Western & international cuisine.

What is the Diploma in Food Preparation & Production Services programme?

This programme is designed to equip trainees with foundational knowledge and practical skills in culinary arts, with a focus on professional food preparation and production. Training takes place in a fully-equipped modern training kitchen, covering food sanitation and kitchen safety, nutrition, Malaysian/Asian/Western cooking techniques and theory, bread and pastry production, kitchen operations management, food and beverage service, menu planning and cost control, and customer service and entrepreneurship.

The programme runs for 10 months, including a 3-month industrial training placement that ensures trainees are fully prepared for the real working world with strong technical skills and confidence.

Graduates receive a Diploma-level certification, aligned with NOSS Code HT-012-4:2011.

This programme offers a Diploma-level certification over 10 months, compared to Culinary Arts Operations, which offers a Malaysian Skills Certificate (SKM) Level 3 over 17 months. Graduates can pursue roles as a Chef de Partie or cook in hotels, restaurants, hospitals, and cruise ships, a kitchen supervisor or assistant, a catering entrepreneur or food supplier, a culinary trainer or instructor, a cookbook author or food stylist, or a food and beverage supervisor.
